In St.Pedro de Columbia, Mayan District, Toledo, South Belize we meet Mr. Eladio Pop. Agroforester, cacao maestro, youtube sensation. The sprawling concrete home for his large multigeneration family perches on a dusty hilltop with lovely views of lush rainforest hiding superfine cacao orchards in the valleys around.
We are shown a large wooden mould used to make pucks of untempered chocolate and we taste little tablets of 100% of the same. We agree to buy as much as we can carry and offer it here for you.
A dark 80% here, a balance between spicy exotic notes of an unfamiliar profile and wild, slightly sweet character. Good intensity, full body, deep molasses on the long finish!
