We used Ecuadorian cacao for it's robust, no nonsense and strong chocolate flavour with the strength to hold its own against the powerful roasted notes of the redskin peanut, creating a balance between the two with the help of a little pink mountain salt.
Technically this is a dark milk chocolate (>50% cacao). In this case the taste of this chocolate in our opinion reflects more milk chocolate due to the cacao not being bitter at all and the caramelly sweetness helps the chocolate not overwhelm.
In this bar we use Costa Esmeraldas cacao from Ecuador. This award winning cacao is ranked among the world's finest at the Cacao of Excellence cup. We've made many other chocolates with this cacao, ranging from dark, dark milk, coconut milk and soy milk, all winning gold or silver accolades.
An outstanding example of Ecuadorian cacao given a very accessible treatment. Not too dark, not too sweet, very wide appeal... you've been warned ;)
